Why we make Chicago pizza

A Chicago pie is made to be shared. One pie, one pasta and a salad will feed a family. That is the meal we wanted to serve, so we built the menu around it.

The rest of the menu was added as customers asked for it. The pasta came first and is now about a quarter of what we sell. The wings came next. The butter chicken and tikka pizzas came from our own kitchen at home.

How the kitchen runs

Dough is made here. Sauce is made here. Pasta is cooked to order. The tiramisu, tres leches and banana pudding are made in this building. The whole kitchen is halal, so there is no second line and no separate fryer.

We are open until 4 AM Tuesday to Sunday, and 4 PM to 2 AM on Monday. Hospital staff, drivers, airport crews and students order here at three in the morning.
