A real Chicago pie is a double crust pie baked in a deep pan, with the sauce ladled over the top. Ours takes thirty minutes and it is the single most ordered thing on this menu.

What actually makes it a Chicago pie

Start with dough pressed up the walls of a deep steel pan. Cheese goes in first, straight onto the dough, so it never dries out. Toppings go on the cheese. Then a second sheet of dough covers the whole thing, and the sauce is ladled on top of that dough, not under it. The pie goes into the oven and it stays there for about thirty minutes.

That order is the whole trick. Sauce on top means the sauce roasts instead of steaming the crust. Cheese on the bottom means every slice pulls. And the second sheet of dough is what separates a Chicago pie from a thick pizza, which is what most places sell you when they say deep dish.

Why thirty minutes is not negotiable

A hand tossed 14 inch is out of our oven in under ten minutes. The Pie is four times the mass and it has a sealed top, so heat has to work through the middle. Pull it early and the center is raw. We do not do that.

What this means for you: order the Pie first, before anything else on the ticket, and call us if you need it at a set time. On a Friday at midnight the kitchen is full and thirty minutes can become forty. It is worth it either way.

Halal deep dish is the part nobody else does

There is Chicago style pizza in Dallas and Irving. There is almost no halal Chicago style pizza anywhere. Our pepperoni and Italian sausage are beef, our bacon is turkey, and every cut of chicken, beef and lamb in the building is halal. That is not a substitution we make on request. It is the only way this kitchen has ever run.

Toppings and crust rules

  • On the Chicago Pie, meat toppings are $1.99 and cheese or vegetable toppings are $1.49.
  • On hand tossed and deep dish pizzas, any topping is $1.00 and shrimp is $2.00.
  • Deep dish upcharge on a regular pizza: small $1, medium $2, large $3, x-large $4. There is no mini deep dish.
  • Gluten free shell is available in 10 inch only, add $2.00. Thin crust is not offered.
  • Half and half is charged the same as a whole pizza.
